How much cheese should I buy?
At Gavasseto & Roncadella, we think of everything, including you, which is why we take special care of the packaging of our Parmigiano Reggiano. Each piece of cheese is vacuum packed with a double layer of good paper, which means you can store your cheese in your fridge for up to six months!
If you are discovering Parmigiano Reggiano for the first time or you want to try the unique taste of Gavasseto & Roncadella Parmigiano Reggiano, we recommend buying the 600g option in order to ensure the freshness of each piece.

How should I store Parmigiano Reggiano?
Parmigiano Reggiano is a perfect cheese. We’re biased, of course…but it’s true! 😁
In order to fully enjoy all its taste and nutritional properties, Parmigiano Reggiano di Gavasseto and Roncadello should be stored as follows:
- Keep the cheese at an optimum level of humidity
- Store it in sealed, closed containers, glass containers being ideal (and environmentally friendly too!) but you can also use cling film
- the optimum storage temperature is between 4 and 8 degrees, i.e. fridge temperature
Our cheese is suitable for long-term maturing and long-term storage.

What are the ingredients of Parmigiano Reggiano?
Parmigiano Reggiano is a 100% natural cheese, made using only three ingredients (milk, rennet and salt) and without any additives or preservatives in sight. The maturation of the cheese, even the very oldest ages, is achieved solely through the salt and the care and wisdom of our cheesemakers.
This is what makes Parmigiano Reggiano naturally perfect. At Gavasseto and Roncadella however, we add an extra special ingredient. OK, we’ll tell you: Gavasseto and Roncadella is made with ❤️
Which ages do you recommend?
This is a difficult question to answer, as it would be like asking a child “who do you love better, Mum or Dad?” 😃
Every Parmigiano Reggiano age is special and has its own unique characteristics. For example, the 12-months aged is still tender and smooth, perfect who prefer a milder and sweeter milk taste, while the 30-months aged has a high concentration of flavour, crumbly and grainy, with a powerful aroma. Always remember that Parmigiano Reggiano cheese has to be aged for a minimum of 12 months 😉
I’m lactose-intolerant. Can I eat Parmigiano Reggiano?
Yes, you can! Parmigiano Reggiano is a genuine foodstuff that is naturally lactose-free due to the aging process.

Is Parmigiano Reggiano always the same?
No! We’ve always said that all Parmigiano Reggiano cheese is not the same.
A Gavasseto & Roncadella cheese has a more yellowish colour, a more intense aroma and a unique scent that results from the way we feed our cows.
Our farmers, through their constant, serious and passionate day-to-day work, looks after a range of different cattle: Swiss Brown, Frisian, Valdostana Pezzata Rossa, Reggiana, Montbéliarde and the Swedish Red-and-White, all of which are bred with respect to their biodiversity 🐮
Furthermore, from May to September, the main source of food for our cows is grass.
This leads to changes in the flavour and nutritional profile of our Parmigiano Reggiano: the cheeses made using milk from the summer months are characterised by a greater intensity and complexity of aromas, scents and flavours.
