The mildest Parmigiano Reggiano, aged for just 12 months. This is the minimum aging period required to receive the D.O.P. certification from the Consorzio (the consortium of cheese makers that champions the rights and supports the good name and heritage of its members).
Still tender and smooth, ideal for those who prefer the silky and sweet taste of milk. Experts refer to it as “fresh” or “table” cheese, because it has yet to acquire the characteristic granularity that comes with age.

Great as an aperitif, diced and enjoyed with a dry white wine, or at the end of a meal.
