Parmigiano Reggiano 40 months – 600 gr
Parmigiano Reggiano aged for 40 months contains only 30% of water and 70% of nutrients: proteins, vitamins, phosphorus, calcium, essential minerals, and amino acids. It is highly digestible, thanks to enzymes that modify casein and make it easily assimilable.
This cheese is the richest in nutrients, driest, crumbliest, and the one with the most granular texture. It has a more decisive flavour and more complex aromas, predominantly notes of spices and dry fruit.
Great enjoyed with full-bodied and structured red wines, as well as passito and meditation wines. Ideal at the end of a meal with honey, jam, or mustard. Perfect paired with traditional balsamic vinegar from Modena or Reggio Emilia. Ideal grated on pasta, rice dishes, vegetable soups, and to add flavour to stuffing and fillings.
